  • pumpkin …… 40
  • milk …… 90
  • sugar …… 5
  • powdered gelatin ……1
  • water …… 5
  • heavy cream…… 2
  • granulated sugar …… 0.2
  • chestnuts (sugar sweetened and cooked)…… 8
  • chervil …… 0.5

■Directions

  1. Put gelatin in water and set aside.
  2. Slice pumpkin thinly.
  3. Steam pumpkin for 8 min and remove rind.
  4. Heat the milk and sugar in a pan.
  5. Dissolve the gelatin over a bowl with hot water.
  6. Add the milk to the steamed pumpkin in a mixer.
  7. Add the gelatin to above 6.
  8. Put in a mold and cool in fridge to jell.
  9. Add granulated sugar to the heavy cream in bowl and whip.
  10. Cut chestnuts into 4 pieces.
  11. When 8. is firm, decorate with whipped cream, chestnuts and chervil.
